Garlic Butter Shrimp Pasta

This is my most-requested dinner, and it barely counts as cooking. Juicy shrimp, a frankly scandalous amount of garlic butter, and pasta that drinks up every drop of it. Twenty minutes on the clock, one skillet doing the heavy lifting, and it tastes like the $26 plate at the restaurant with the candles. I’ve made it for dates, for deadlines, and once at midnight for no reason at all. No regrets.

The whole thing hinges on two moves. First: shrimp cook fast, so you sear them for barely ninety seconds a side and pull them out of the pan before they can turn rubbery — they finish in the sauce at the end. Second: a splash of starchy pasta water whisked into the garlic butter turns it from a greasy slick into a glossy sauce that actually clings to every strand instead of pooling at the bottom of the bowl. That’s restaurant pasta in one sentence.

Why you’ll love this one

✓20 minutes, start to finish. The sauce comes together while the pasta boils.
✓The shrimp stay juicy. Seared hard and fast, pulled early, added back at the end.
✓Pantry-simple. Butter, garlic, lemon, parsley — nothing you have to hunt for.

A few ingredient notes

Buy the biggest shrimp your budget allows — 16/20 count is the sweet spot — and frozen is completely fine; that’s what most “fresh” seafood counters sell anyway, just thawed. Linguine is my pick because it holds sauce beautifully, but spaghetti or fettuccine work. And please use real butter and fresh garlic here — this recipe has nowhere for the jarred stuff to hide.

Instructions

1

Bring a large pot of aggressively salted water to a boil and cook the linguine to one minute shy of al dente. Before you drain it, scoop out 1½ cups of the starchy pasta water — that’s your sauce insurance.

2

While the pasta cooks, pat the shrimp very dry and season with the salt and pepper. Heat the olive oil in a large skillet over medium-high until shimmering, then sear the shrimp about 90 seconds per side, until just pink and curled into loose C shapes. Pull them to a plate — they are not done hanging out with us, just resting.

3

Drop the heat to medium. Add the butter, garlic, and red pepper flakes to the same skillet and cook 2 minutes, stirring, until the garlic is fragrant and barely golden. Do not let it brown — browned garlic turns bitter fast.

4

Pour in the wine and simmer 2 minutes, scraping up any browned bits, until reduced by about half.

5

Add the drained pasta and ¾ cup of the reserved pasta water. Toss constantly for 1–2 minutes — the water and butter will emulsify into a glossy sauce that coats every strand. Add more pasta water a splash at a time if it tightens up.

6

Off the heat, return the shrimp and any juices from the plate. Add the lemon zest, lemon juice, parsley, and parmesan. Toss, taste for salt, and serve immediately with extra parmesan.

Dan’s Notes

The only way to wreck this dish is walking away from the shrimp — 90 seconds a side, then out, no exceptions. Leftovers keep 2 days; reheat gently in a skillet with a splash of water, never on full blast in the microwave.
