Hey, I’m Dan.
Home cook, serial recipe-tester, and firm believer that dinner shouldn’t be complicated to be great.
Otoko Cooking started in 2019 in an apartment kitchen roughly the size of a phone booth — one cutting board, two burners that disagreed about temperature, and a stubborn idea: weeknight food can taste like weekend food if the recipe respects your time.
I’m not a chef. I’ve never worked a line, and I own exactly zero tweezers. What I do have is a mild obsession with why things work: why smashing a burger beats pressing it, why miso goes gritty if you boil it, why day-old rice fries better than fresh. Every recipe here gets tested at least twice — usually because I ate the first batch before photographing it.
The rules of the house
1. Grocery-store ingredients. If it takes a specialty importer, it doesn’t go on the site.
2. Every step earns its place. No “transfer to a third bowl” without a reason.
3. Notes over perfection. Each recipe tells you the mistake I made so you don’t have to.
Say hi
Made something? Found a typo? Want to argue about pineapple on pizza? Drop me a note — I read everything. Or start cooking with the five recipes I’d make first.
